Mom's Friday Night Pizza
Friday night tradition - everyone gets their own.
Ingredients
- Dough:
- 1 1/2 T active dry yeast
- 2 cups tap water
- 5 cups bread flour
- 1 t kosher salt
- SAUCE
- 1-28 oz can crushed tomatoes
- 1-4oz tomato paste
- 1 t each - oregano, garlic powder, thyme, dried basil
Instructions
Mix dough dry ingredients together in a standing mixer with bread hook. Adding water slowly until dough ball forms and starts to clean side of mixing bowl. Add more water a little at a time if needed. Coat a gallon zip lock bag with enough olive oil to coat then add the dough and press out all the air and seal tightly. Let rise in bag (2-4 hours). You can press dough down and let rise again but it isn't necessary.
Sauce: mix all sauce ingredients together and warm.
ASSEMBLE:
Split dough into 4-5 pieces. Take one ball of dough and roll out to about 1/4-1/2 in thickness on a floured surface. Place rolled out dough and place on a pizza peel sprinkled with corn meal. Rub olive oil thinly around dough. sprinkle dough with finely treated parmesan cheese. Spread sauce to desired amount around dough. Top with desired toppings and Mozzarella (I use fresh but have been know to use shredded hard mozzarella). Slide pizza onto HOT pizza stone that has corn meal on it. Bake for about 10-15 minutes or until topping is cooked to desired doneness. Remove from oven and gently move pizza from stone to cutting board. Repeat, repeat, repeat!
