Homemade Pasta

Worth the effort for special occasions.

Ingredients

  • 1 3/4 cups finely ground semolina flour (or pasta flour)
  • 1 cup unbleached all-purpose flour
  • 1/2 t salt
  • 3 large eggs, room temperature
  • 3 T water

Instructions

Combine both flours, 1/2 t salt, eggs and water in food processor or standing mixer until the dough starts to clean sides of bowl. Dough should be smooth and moist, not sticky. Add a little flour or water to correct consistency as needed. Cut dough into 8 pieces. On a floured surface roll pieces into rectangles, about 12 inches long and 1/2 thickness- place each piece on wax paper and let rest for about 10 minutes. If using past attachment to Kitchen Aid slowly add the rolled out dough through the cutter and return to wax paper OR roll thinner and cut into desired pasta width. Dry a bout 15 minutes before cooking. To cook pastas until tender about 2-4 minutes.
