Garlic Scapes Pesto
Got this recipe when we did the organic co-op farmers and it was very good and different
Ingredients
- Garlic scapes 6-8 count, chopped
- Juice of 1 lemon
- 1/4 cup grated Parmigiano-Reggiano cheese
- 1/2 cup extra virgin olive oil
- Coarse salt and pepper
Instructions
Blend together garlic scapes, lemon juice, cheese, salt and pepper in a food processor or blender. Slowly add olive oil with the motor running and blend until emulsified and smooth. Taste and add coarse salt and pepper as needed.
