Applesauce Spice Muffins
Perfect for fall mornings.
Ingredients
- 1 cup butter or margarine, softened
- 2 cups all-purpose flour
- 2 cups sugar
- 1 T baking soda
- 1 t salt
- 1 egg
- 2 cups unsweetened applesauce
- 3 t ground cinnamon
- 1/2 teaspoon nutmeg
- 2 t ground allspice
- 1 t ground cloves
- optional 1 coup chopped walnuts
Instructions
Preheat oven to 400. Beat softened butter and add applesauce in standing mixer. Combine dry ingredients and mix into butter mixture - just until moistened. Fill muffin cups 2/3 full - I use cupcake liners. Cook muffins for 18-20 until muffins spring back in center.
You can store the batter in refrigerator for up to a week or freeze muffins. I use to make these fresh in the mornings for everyone's lunches.
